Chia Fruit Pudding

I’m not going to sugar coat this, the hardest part of deciding whether I was going to do a Vegan raw diet came by way of deciding what I would be able to eat for breakfast.  How was I going to get by without my warm cup of coffee? There is nothing in the world that compares to a nice hot cup of coffee in the morning. The aroma that pervades the kitchen, and the warm feeling of the liquid as it fills your body and I can’t leave out that unmistakable burst of energy the caffeine that provides. What could possibly compete with my morning regimen? I finally convinced myself that I would at least try it for a week. But what about my nice morning omelet or warm oatmeal? These thoughts still went through my head as I proceeded toward my first week of vegan raw eating.

All I can say after a year of vegan raw eating is, “Try it!” There’s a good chance you’ll love it as much as I do or more. Today I am going to share one of my favorite go-to breakfast that’s an ideal recipe for a raw vegan diet. It’s yummy and easy to make!

The highlight of your new breakfast option are chia seeds. Chia seeds aren’t just referred to as pets anymore. Those “Cha-cha-cha…chia” infomercials that we giggled about, are now the seeds health and fitness enthusiast rave about. Many nutritionist have even labeled it a superfood. If you’ve never tried a chia seed recipe, this one is a terrific one to get you started. Be careful, one bite, and you just might become an instant chia seed fan.

Chia Fruit Pudding

(serves 1-quadruple ingredients to make ahead for the whole week)

1 TBS Chia Seeds
3 TBS Raw Almond Milk or water
¼ Cup Cashew Cream
-2 cups Raw Cashews soaked overnight in the refrigerator in enough water to cover nuts
-Drain and Rinse
-2 cups water
-Place soaked nuts and water in blender
-Blend in high speed blender until smooth
-Store in refrigerator.
1 TBS Raw Honey (optional)

Soak Chia Seeds for at least 30 minutes. I personally like to do this the night before. In the morning take your Chia Seeds and add the ¼ cup Cashew Cream and honey. Stir.

The options are endless from here. My personal favorite is to add cinnamon. Disclaimer: I love cinnamon in EVERYTHING. Add in your favorite fruit of the season and drizzle in a little raw almond cutter or coconut butter on top and viola…you’ll have a chia masterpiece. Enjoy!
