Healthy Lunch Options: How to Make a Quick Lunch in a Jar

Making a quick healthy lunch, just got easier! Would you believe me if I told you that you could pack a filling and healthy lunch in one jar? Well, guess what? You can! And, we’re going to show you one of the simplest, quickest, healthiest ways you can pack your lunch in a jar. Get ready for a yummy lunch on-the-go.

Here’s what you’ll need:

-16 oz or larger Mason Jar

  • 3-4 tablespoons of your favorite salad dressing
  • Your choice of coarsely chopped vegetables: broccoli, onions, carrots, beets, celery, corn, tomatoes, green beans, cooked beans (garbanzo beans,kidney beans, black beans, edamame etc) snap peas, red peppers, cabbage, kale, etc
  • 2 handfuls of your choice of chopped greens (romaine lettuce, spinach, arugula or kale, etc)
  • 1 cup of cubed chicken, tofu, or cheese

Directions:

Start by pouring your choice of dressing into your Mason jar. You can go for a balsamic vinaigrette, ranch, thousand island or you can opt for something lighter.  Here’s a quick DIY you might want to try. Simply mix olive oil with lemon juice and add salt and pepper to taste or if you want something more tangy, try one of our homemade salad dressing options.  Add your coarsely chopped veggies, starting with the larger/harder veggies (broccoli, red peppers, cooked beets). Then proceed with your lighter veggies, beans, onions, tomatoes, celery, corn etc). Then, add your bean and protein selection to your salad. Feel free to add  in a little crunch by including nuts, pita crumbles, or croutons. Top with your favorite  greens.
