I bet you didn’t know that a lot of the salads you are already enjoying are raw…or if not completely raw then one ingredient removed and it could be…typically this non raw ingredient is the protein.
Nothing is simpler than a salad.
My go to lunch is getting creative with my salads
RAINBOW RAW SALAD
I always start with a greens base, typically, I fill the bottom of my bowl or plate with kale or spinach. After the base is built then the real fun comes into play. A goal of mine is to make it look as colorful as possible. The more colors you have the more variety…variety is the spice of life!
Toppings:
Veggies Galore– cabbage, cucumber, broccoli, cauliflower, bell peppers, celery, carrots, onions, artichoke, mushrooms, cilantro, parsley, tomato (yea it’s a fruit), beets, etc
Fruit (I would stick to one-to keep daily servings in line)-strawberry, blackberry, blueberry, raspberry, boysenberry, goji betty, kiwi, grapefruit, oranges, melon, pomegranate, etc
Fats (1 serving)-avocado, soaked raw nuts (almonds, walnuts, hazelnuts, cashews, etc)
And to top everything off…some good ol’ fashion lemon juice.
