Lemon, Honey & Garlic Soup

1 Tbsp finely diced yellow onion celery and carrots
1 minced clove garlic
1 Tbsp fresh lemon juice
1 tsp grated lemon zest
Cover with: 1 1/2 cups hot vegetable broth and
drizzle honey
Sir to combine.
Curry Green Leaf Soup

1/2 cup finely shredded spinach or kale
1 Tbsp finely diced red onion
2 tsp curry powder
1/4 tsp cayenne
Cover with: 1 1/2 hot vegetable broth
Stir to wilt greens.
