What’s for Breakfast? Quick, Hearty & Healthy Breakfast Recipes! 

I’m not ashamed to admit that I’m an unapologetic  breakfast lover! I’m always happy to hear when leading nutritionist and experts report that breakfast is deemed the most important meal of the day, which translates to my “breakfast loving ears” as “eat up”, and “bon appetit!”
Being a hearty breakfast eater, hasn’t always panned out for me as it pertains to picking the right meals to start my day. Many people, like myself, need a little more than a lonely piece of fruit and bar of granola to effectively tackle their daily activities. That’s why, for the past few years, I’ve been exploring healthy breakfast options and I’m happy to share the breakfast goodies that I’ve found. Not to mention, they’re also quick, healthy, and uber hearty. I never feel as if I’m starving after I finish any of these healthy breakfast options. They’re truly a famished breakfast lover’s dream.

Orange Banana Smoothie

Ingredients
1 1/2 cups freshly squeezed orange juice (4 oranges)
1 tablespoon freshly squeezed lime juice
1 cup strawberries, tops removed, and cut in 1/2
1 to 1 1/2 ripe bananas
Directions
Combine the orange juice, lime juice, strawberries, and banana in a blender and process until smooth. Refrigerate until cold.

Oatmeal with fruit

Oatmeal topped with your choice of fruit, blueberries, bananas, strawberries, are a few of my favorites. Nuts are a good topping too!

Blueberry Buckwheat Pancakes

Ingredients
1 1/4 cup buckwheat flour 
1 cup whole wheat flour
1/3 cup vanilla whey protein powder
1 tbsp buttermilk powder (optional)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 1/4 cups almond milk
3 large eggs
1/4 cup canola oil oil
2 cups blueberries In a large bowlWhisk all ingredients together in large bowl.Sprinkle each pancake with 1 to 2 tbsp blueberries. Let pancakes cook until bubbles are forming on the top and the bottom is golden brown. Serve with maple syrup.


“Breakfast” literally means the meal that “breaks the fast”. It’s considered your most important meal because it affects your eating for the rest of the day. Starting the day with a well-balanced meal that supplies adequate protein, carbohydrate and fiber keeps hunger at bay and allows you to make wise choices for the meals which follow. Calorieking.com

Black Bean Breakfast Burrito

Ingredients

  • 1- 2 egg whites
  • 1/4 cup  canned black beans, rinsed and drained
  • 2 tablespoons  salsa
  • 2 tablespoons  shredded low-fat cheddar cheese
  • 1 small whole-wheat tortilla

DIRECTIONS: Scramble eggs, beans, salsa and cheese. Fill tortilla with egg mixture.

Santa Fe Egg Scramble

Ingredients

  • 1 egg plus 2 egg whites
  • 2 tablespoons canned green chilies, dried
  • 2 tablespoons cheddar cheese
  • 1 whole wheat tortilla, heated
  • 1/2 grapefruit

Directions: Combine ingredients and wrap in wheat tortilla. Serve with grapefruit.
