Raw Kelp Noodle Coleslaw
This is a great spin on a otherwise calorie packed, dressing heavy side dish. The added kelp noodles give it a great crunch that often missing in the basic coleslaw.
**Keep in mind that all kelp noodles are not raw. This is the brand I prefer. It has raw written on the package.
Salad ingredients:
1 head purple cabbage, cored and chopped (or shredded)
3 large carrots, chopped or shredded
1 bunch green onions, chopped
1 cucumber, peeled and chopped
1 package kelp noodles-from my experience you may want to cut the noodles. They tend to get caught up in one another and have some long noodles.
(optional) 1 cup raisins ***not all raisins are raw, actually most of them aren’t-a good raw raisin brand is Low Raw Foods
Dressing ingredients:
3/4 cup raw almond milk (check out this link for a great recipe http://www.choosingraw.com/simple-homemade-almond-milk/)
1/2 cup raw almond butter (check out this link for a great recipe http://www.therawtarian.com/raw-almond-butter-recipe
2 tablespoons raw coconut vinegar
1/2 teaspoon sea salt
a pinch of freshly ground pepper
Dressing instructions:
In a blender, combine the raw almond milk, raw almond butter, vinegar, salt, and pepper. Blend until smooth.
Salad instructions:
In a large bowl, combine the cabbage, carrots, cucumber, green onion, kelp noodles and optional raisins.
Add the dressing and toss to coat. I personally like to massage the dressing into the salad to really work it in!
This is a perfect side to take on a picnic or camping!
